Dinner, April 10, 2013: Zucchini and squash noodles. I've been making this vegetable medley for many years. I steam the noodles before putting them in a lemon-garlic vinaigrette that I make with fresh lemon juice, minced garlic, and extra-virgin olive oil. I also add a little sea salt and freshly ground black pepper to taste. Not pictured are the steamed portobello mushrooms and broccoli I added to the mix later. Very filling, delicious and healthy!
